Wholesome option

Homemade Cauliflower Soup.

Ingredients

3/4 cup raw cashews (soaked), 2 tsp extra virgin olive oil, 2 medium onions (diced), 2 stalks celery (chopped), 3 large cloves garlic (minced), 6-7 cups cauliflower or/and broccoli, 6 cups water or broth (divided) 1-2 tsp salt.

Method

Place cashews in a bowl and cover with hot water. Soak for 30mins.

Add oil to a large pot over medium heat. Once hot, add onion and a pinch of salt, then saute for 3 mins. Add celery and carrots, saute for another 5 min. Add garlic and cauliflower or/and broccoli, then saute for another fives mins.

Add 5 cups water, 1 1/2 tsp salt and pepper. Stir and bring mixture to boil. Once boiling, reduce heat and simmer for another 15 mins.

Drain cashews. Place cashews and 1 cup water in a blender or stick blender. Add the mix to soup and use a stick blender until smooth and creamy.

Gluten free option

Homemade Tomato soup.

Ingredients

3kg tomatoes, 2 small onions, 1 tablespoon sugar, 2 tsp salt, 125g butter, 1/2 tsp citric acid, 1 tsp basil, 1 tsp celery salt, 2 heaped teaspoons of corn flour, 1/4 tsp baking soda, 1/4 cup water.

Method

Cut tomatoes into four and place with chopped onions and half cup of water into a pot.

Bring to boil and simmer for 20mins. Add sugar, salt, butter, celery salt and basil, then simmer for 5 mins. Remove from heat, mix together corn flour, citric acid, baking soda with 1/4 cup water, add and stir into pot slowly. Put back on heat and simmer for 5 minutes.

Salad

Sprinkle on your favourite salad.
